Signature: This game involves mechanically simulated, small-scale horse races, hence, the French name, petits-chevaux, which translates into “little horses” in English.

How It Works: Players bet on which of the eight horses they believe will reach the finish line first, noting their choice on a board containing divisions. (Each horse has a different color or number.) The horses are started and race around the track. One emerges as the winner. All players who bet on that horse get so many times their wager.

Trivia: Le Casino Municipal de Beausoleil, in France, which opened in 1907, offered petits-chevaux along with baccarat.
